It's been awhile - how has your New Year's Resolutions going?
Our resolve to stay grain free has wavered a bit over the past 4 months, but we are back on the Paleo wagon (well I am, the rest are still a work in process)
I have been using Pinterest a lot lately and if you want to follow my boards, here is the link. It works great when I want to keep a recipe, but need the picture to remember what it was. I have lots of bookmarked recipes, but I rarely go back to them, but with Pinterest, the links are all in one place on one board with pictures - score!
I have found the secret to any lifestyle change is planning. Learning to plan a weekly menu has been a good start. In the past, I would write down the menu and then forget to start something on time or forget an ingredient, so in other words - my heart wasn't really in it.
This week has been the 4th week I tried it again, and I finally think I have it down. Well it looked good on paper and Mon, Tues, and Wed were great. Then I came down with a cold and Thurs and Friday were leftovers.
Monday night we had Nachos (organic beef, lightly salted NutThins, cheese, salsa)
Tuesday was Pan Roasted Chicken with lemon green beans
Wednesday was Fire Roasted Bacon Meatloaf with hot crashed potatoes
Saturday was Sweet potato enchiladas thanks to Paleomg.com
April is ending and May is next week already. Where has all the time gone? Why is it the older I get the faster time flies? Can someone help me catch it?

Monday - Cream of Broccoli Soup w/chicken
Tuesday - Paleo spaghetti (julienne zucchini) and marinated steak strips
Wednesday - orange chicken thighs with sugar snap peas
Thursday - leftovers
Friday - cauliflower pizza with coconut ice cream for desert
Saturday (CINCO DE MAYO) - baked chicken fajitas, stuffed jalapenos, and margaritas.
